West Coast Salmon Crisp

Things you will need to make this dish:

  • sushi grade salmon

  • wantons wrappers

  • nori

  • garlic

  • ketchup

  • soy sauce

  • cilantro or herb of your choice to garnish dish before serving

Other items you may need:

  • maple plank *make sure its not treated as you will need to smoke your raw fish in the plank

  • torch

  • glass cover *I used a martini glass to keep the smoke in!

Let’s begin…

  1. Deep fry wantons wrappers and set aside.

  2. Combine garlic, ketchup, and soy sauce in a blender and mix it till smooth in consistency. For sweeter taste - add more ketchup to the mix! Recommended ratio: 1:1:1

  3. Torch maple plank until you see wood developing into coalish with flame from torch being absorbed nicely. Place nori on top of sushi grade salmon then cover to keep smoke in.

You are ready to plate!

  • Just simply combine all ingredients. View image as suggested serving.

Tips:

  • Try to crisp the wanton wrappers by heating up your oil in the pan first prior to frying the wrappers. I like mine to just be close enough to be brown. Also - don’t forget to flip even the wrappers are soaked in oil! Heat transfer is different facing up.

  • Roast garlic for extra layer of flavour.
