Summer Crab with Spirulina Crisp

Looking to refresh your buds this summer - taste this gluten free *vegan optional dish. Ready in less than ten minutes.

Either serve as an appetizer or do a summer crab salad wrap with baby spinach mix with kale or baby arugula.

Ingredients

100 grams of fresh crab meat

1/2 bunch of cilantro *finely chopped

1/4 cup lemon juice

1/8 cup tamari sauce

1/16 cup onion powder

1/16 cup salt powder

1/16 cup pepper

1 spirulina sheet

1.) Mix all ingredients together except spirulina sheet.

3.) Cut spirulina sheet 1/2 inch triangle or square.

Serving Suggestion

Place summer crab dish on a Chinese spoon, add spirulina sheet to add crispiness.

Shrooms | Cooking with Enokitake

To start the week right, I thought I would boil some water with sodium aka soup to replenish what the sun and the festivities took out of me last week - The Greatest Outdoor Show on Earth = Calgary Stampede.

I got inspired after all salute to history at last week's Calgary Stampede. Always curious how to cook enoki mushrooms - here is what I found out.

1.) Just like any mushrooms, enokitake [Japanese] is best sautéd.

2.) Can be eaten raw.

3.) Best paired with sesame oil.

PS: tried the shrooms with some broth and vegetarian balls - love love loved it.

Ingredients

ramen noodles

3 eggs

100 grams enokitake mushrooms

1/4 cup water

1/4 cup sliced green onions

1/4 cup sesame oil

1/8 cup shredded cloud ear fungus *soak in water to soften

1/8 cup soy sauce

1/8 onion powder

1 tablespoon garlic crisp

1.) Cook noodles al dente in ample amount of water.

2.) Set aside ...

3.) Add sesame oil, cloud ear fungus, soy sauce and onion powder to hot pot and put on high flame. Stir for a minute and add water and let it boil.

4.) Set aside ... crack the first egg, mix and fold egg into the broth. Finally add enokitake mushrooms and cover pot.

5.) Poach two eggs.

Serving Suggestion

In a large bowl or a noodle plate - portion cooked ramen noodles, tower with poached egg, add broth, green onions and serve.

*Add some cayenne to add spice.
